Coffee-Crusted Pork w/Orange Watermelon Relish

When I found this recipe, I had no idea I had discovered a dish my entire family would love.  I was a little worried about the coffee, but the kids devoured the pork.  My husband and I savored every bite.  You will be amazed by the relish.  Use leftovers on your hot dog the next day.  It’s sooooo delicious.  You could also serve with grilled fish! Yum!  (Adapted from Samantha Seneviratne’s Grilled Pork Tenderloin)
I will warn you.  The relish is a bit time-consuming, but you are going to be so proud in the end.
What You Will Need:

1 ½ lb pork tenderloin (two tenderloins)
¼ C finely ground coffee (treat yourself to the good stuff and grind it in the store)
1 (3-4 lb) seedless watermelon; separate flesh from rind and set aside; peel dark green from rind; dice

2 large oranges; peel and dice
2 shallots, diced
What You Already Have:
1 C brown sugar
½ C apple cider vinegar
1 tsp chili powder
Olive oil
Medium glass casserole dish
Medium bowl
Medium sauce pan
Small bowl
Cutting board
1)      Prepare relish.  Toss 1 C diced watermelon, diced rind, diced orange, shallots, 2/3 C brown sugar, vinegar, and dash of salt.  Add to sauce pan.
2)      Bring to boil for 10 minutes.  Simmer for 35-40 minutes.  Remove from heat.

3)      Prepare grill.
4)      In small bowl, mix coffee, 2-3 T olive oil, chili powder, and 2 tsp brown sugar.

5)      Transfer pork to casserole dish.  Rub with coffee mixture on all sides.

6)      Grill until pork is cooked, about 140F.  Let stand for at least 10 minutes.
7)      Serve with relish.
