Summer Quinoa Salad

Are you looking for a refreshing side dish to accompany your grilled steaks?  This is a perfect alternative to your regular leafy salad.  Try something different.  The crunchy cucumbers and ripe tomatoes will please your taste buds and clean your palate just in time for dessert.

This salad would be great on its own as well.  The saltiness of the feta compliments the acidity from the tarragon vinegar.  Who would have thought you could have so many flavors in a simple salad?  Go crazy and add some shrimp or chicken if you please.

What You Will Need:

½ C dry quinoa (don’t forget to rinse if needed)

1 C water

1 cucumber, cut into ½ inch pieces

1 tomato, diced

3 oz crumbled feta

1 ½ T tarragon vinegar

½ tsp dried basil

1 tsp garlic salt

What You Already Have:

Small pot with lid

Large bowl

Cutting board

1)      Prepare quinoa.  Mix water and quinoa in small pot.  Bring to a boil then lower heat to simmer.  Cover to absorb liquid for about 10-12 minutes.  Remove from heat.

2)      Mix tomato, cucumber, and feta with quinoa in large bowl.

3)      Pour in vinegar, basil and salt.  Toss.

4)      Serve.

**Note** If you want to get a little more creative, serve in green pepper.  Preheat oven to 350˚.  Fill green pepper with quinoa salad and sprinkle with parmesan cheese.  Bake for 20 minutes and serve.
