Hanover Tomato and Watermelon Salad
8:21 AMHanover tomatoes have a reputation for being divine in the summer. These local celebrities are juicy, big and ruby red. They’re gorgeous. I bet they could make a tomato-lover out of anyone! My husband eats them like they’re apples. They’re just that good.
For those of you, who haven’t heard of Hanover County, let me give you a quick bio. This small county is just north of Richmond, Virginia and about an hour and a half away from Washington, DC. The wonderful county is full of beautiful farmland rich with horses and outstanding crops. The historic railroad town of Ashland makes up a part of the excellent place and there resides Randolph-Macon College, the greatest college on Earth. Local residents call this area “The Center of the Universe.”
There are many ways to enjoy these heavenly tomatoes without disguising their already perfect taste. Tomato tarts are pretty hard to beat. Caprese salad (see below) is a staple in our house. I served it with the North Carolina Style Burger this weekend. Pasta salad incorporates these treasures with a hint of tang. (Drumroll) And now onto the best salad….
What You Will Need:
1 C Hanover tomato, diced (varies because these babies can be huge)
½ seedless watermelon, diced
½ C fresh basil, coarsely chopped
1/2 fresh mozzarella ball, coarsely chopped
1/2 fresh mozzarella ball, coarsely chopped
What You Already Have:
½ tsp dried mint
2 T olive oil
1 T red wine vinegar
¼ tsp black pepper
½ tsp salt
Large cutting board
Large bowl
1) Mix all ingredients in large bowl and toss.
2) Serve with your summer meals EVERY NIGHT!
Caprese Salad
1 Hanover tomato, sliced
Basil
Fresh Mozzarella
Garlic salt
Olive oil
Balsamic vinegar
1) Place tomato slices on platter. Top each with generous slice of mozzarella and basil leaf. Sprinkle a hint of garlic salt on each portion. Drizzle with olive oil and balsamic vinegar.

This looks really refreshing. I love how the watermelon and tomatoes blend in so well you can hardly tell which is which.
