Good Ole Zucchini Bread

I mentioned that my generous neighbor gave us some of her extra veggies last week here.  The bag of goodies included two beautiful green zucchinis that I wanted to use immediately.  My first thought was to save them for a dish, but I LOVE zucchini bread.  I grew up on the stuff.  I wanted to share the love with the rest of my family.  Those zucchinis lived a long life in the field, but probably only stayed around for five minutes in my house before they were chopped up on my mandoline.

I strongly recommend using a hand-held mandoline when preparing veggies or fruit for any bread recipe.  It juliennes the vegetable finely and is perfect for bread.  I cannot live without it.  The handheld version is much easier to store too.

There are tons of quick bread recipes out there.  I cut back on the butter and added brown sugar to this one and deleted the nuts and cranberries.  Zucchini bread should be plain and show off its star ingredient. 

What You Will Need:

2-3 C finely chopped zucchini

What You Already Have:

2 eggs

3 C flour

2 tsp cinnamon

Dash of nutmeg

pinch of salt

Non-stick cooking spray

1 ½ sticks of unsalted butter, room temperature

1 C sugar

½ C finely pack brown sugar

1 tsp vanilla

2 tsp baking soda

2 loaf pans

Large bowl

Medium bowl

spoon

Hand mixer

1)      Preheat oven to 350˚.

2)      Prepare loaf pans by spraying with cooking spray.

3)      In large bowl, beat together eggs, sugars, vanilla and butter on low-medium speed.

4)      Mix baking soda, salt, cinnamon, nutmeg and flour in medium bowl.

5)      Slowly add flour mixture to egg mixture and stir with spoon.

6)      Fold in zucchini.

7)      Divide batter into two loaf pans.

8)      Bake on top rack for an hour or until completely cooked.

9)      Remove and cool.

10)   Slice and serve plain, with butter or cream cheese.

  14. When I was a kid, my father planted way too many zucchini one year. We ate zucchini-everything!!! I haven't been able to eat it since lol.

    However, this looks so good (and I am starving), I may have to try it again.
