Tacos de Bistec con Salsa de Aguacate

(Steak Tacos with Avocado Salsa)

I hope I translated that correctly.  I’ll have to check http://spanishforkids-jbplbarbara.blogspot.com/.  Barbara’s blog incorporates Spanish translation into everyday stuff to make learning the language easier for kids.  I cannot wait to read some of her book suggestions to my children.
It’s really nice to be able to use the grill as often as possible during the summer time.  If you haven’t noticed by now, we’ve been grilling pretty often.  I thought we should indulge a little more by adding some red meat to the mix.  The grill master deserves a special treat, don’t you think?
These tacos are so simple yet full of flavor.  We all know that the best dishes are those that use the least amount of ingredients.  You aren’t going to need any sour cream.  Garnish with a little cheese, but don’t overdo it.
What You Will Need:
¾ lb sirloin top round (don’t slice until after grilling)
***1 ½ T lime seasoning
6-8 flour tortillas
1 C shredded romaine lettuce
½ C chopped onion (Vidalia is great on this taco)
1/3 C shredded Mexican blended cheese
What You Already Have:
Aluminum foil
Salsa (optional)
1)      Prepare grill and preheat oven to 350˚.
2)      Rub steak with seasoning.  Cook until well done.
3)      While steak cools, wrap tortillas in foil and bake for 10 minutes.
4)      Remove from heat and slice into ½ inch pieces.
5)      Plate tortillas and top with lettuce, onion, salsa, cheese and steak.  Wrap and serve.
6)      Even young kids will love these if you wrap and then slice into small pieces.  Top with very mild salsa.
***Note: Our grocer was out of limes, so I had to cheat a little bit.  If you can’t find lime seasoning, mix up equal parts cumin, paprika, pepper, oregano, basil, marjoram, thyme, coriander, onion powder, garlic powder.  Add chili pepper to your liking.  Rub steak with mixture and then squeeze lime juice over steaks before grilling.
