Spinach Pesto Linguine w/Goat Cheese and Chicken
7:50 AMWhen I decide what we’re having for dinner, I always think about how to make it fun for the kids. Dinner time is much more pleasant when there’s no whining and fussing about the food in front of them. It’s nice to hear them cheering when they see what I’m fixing for supper too. This recipe received big smiles all around.
I also think it’s important to educate their palettes early on. If you do this, you’re less likely to have a picky-eater. Don’t get me wrong, my kids definitely favor regular “kid” food. It’s nice to see them try different things over the holidays without begging them to.
What You Will Need:
¾ lb thinly sliced, skinless, boneless chicken breast, cut into 1 inch pieces
10 oz frozen chopped spinach
¾ C grated parmesan
2 T pine nuts
1 T dried basil
3 T olive oil
2 garlic cloves, minced
1/2 C chopped onion
1 (14.5 oz) can petit diced tomatoes, drained
½ (3 oz) packet of plain goat cheese
What You Already Have:
½ lb thin linguine
Microwaveable-safe bowl
Food processor
Large skillet
Large pot
1) Place frozen in microwaveable-safe bowl and heat for 90 seconds. Drain and squeeze moisture out. (Doesn’t have to be 100% thawed)
2) Transfer to food processor. Add parmesan, basil and pine nuts. Turn on food processor and pour in 2 T olive oil. Chop until smooth. Set aside.
3) Heat 1 T olive oil in skillet over medium-high heat. Add onions and garlic.
4) Add chicken to skillet and cook until no longer pink.
5) Stir in tomatoes and spinach pesto and heat through over low to moderate heat.
6) Cook pasta according to package directions. Drain and put back in pot.
7) Stir in spinach mixture and goat cheese with pasta.
8) Serve.

Oooh pesto! I miss making one when I used to work in the kitche. I'm not sure if my family would like it though. Doing my hop from this week's FTF! Here's mine:
