Salad Jubilee with Grilled Mustard Chicken

I was in charge of our Saturday dinner this weekend.  We joined my parents for a nice weekend at the Rivah.  Mom cooked Friday night.  This gave me time on Saturday to gradually put everything together for this amazing salad.  I accompanied it with some spinach Mac n’cheese (recipe to come).  The reviews from my parents and my husband were all great!  I was a little worried about the cherries because we all know my husband doesn’t like sweets for dinner nor does my dad.  They loved it and you will too.
I definitely adapted this Bon Appétit recipe from to suit the kitchen I’d be cooking from.  I must say it was outstanding.
What You Will Need:

6-8 thinly sliced skinless, boneless chicken breasts
3-4 slices of sourdough boule, cut into 1-inch pieces
1 head of Bibb lettuce, coarsely chopped
1 head of romaine lettuce, coarsely chopped
½ lb cherries, pitted and halved
What You Already Have:
2 T unsalted butter
½ tsp dried dill
6 T yellow mustard
5 T honey
4 tsp sugar
½ C lemon juice
2 garlic cloves, minced
¾ C olive oil
Salt and pepper
1 medium bowl
Cherry pitter (or knife and two bowls)
Casserole dish
Large skillet
Large salad bowl
1)      Remove pits from cherries and discard pits.  If using a knife, cut in half and remove pit with fingernail.

2)      In medium bowl, mix dill, mustard, garlic, honey, lemon juice, sugar, olive oil, sugar, and dash of salt and pepper.  Whisk together.

3)      Place chicken in casserole.  Pour ½ of marinade over chicken and marinate for at least one hour.
4)      Melt butter over medium heat in large skillet.  Reserve remaining dressing.
5)      Toast breadcrumbs in skillet until slight browned.  Set aside.

6)      Prepare grill.  Grill chicken and discard marinade.  Let cool.

7)      Chop chicken into 1-inch pieces.
8)      In salad bowl, mix together chicken, lettuce, cherries and dressing.  Top with croutons.

9)      Serve.
