Plum Chicken Kabobs

I’ve never thought about grilling plums.  After tasting this dish, everyone in our family agreed it’s a “REPEAT”!  Before I had a chance to sit down, Wee Bit had eaten half of hers.  The Oldest couldn’t stop saying, “This is delicious, Mommy. Mmm.”  I will definitely fulfill their wishes and make this again this grilling season and next and the next…
The inspiration came from  It’s was printed in January of 2004 in Oxmoor House.  The great thing about it’s so good, you don’t even care if it’s healthy or not.  I know it’s good for us, that’s all that matters. 
I served it over top of some quinoa cooked in chicken broth and steamed green beans.  All of our plates were clean by the end.  Enjoy!
What You Will Need:

6-8 wooden skewers (soaked in water for at least 30 minutes)
3 skinless, boneless chicken breast, cut into 1 inch pieces
2 ripe plums, cut into 1 inch pieces
¾ C hoisin sauce
2 T Rice Wine Vinegar
2 T fresh ginger, minced
1 T fresh garlic, minced
Casserole dish
1)      Mix hoisin, vinegar, ginger and garlic in casserole dish.
2)      Add chicken to marinade.  Cover each piece with marinade.

3)      Set aside for 30 minutes.
4)      Prepare skewers alternating chicken then plum until all gone.

5)      Prepare grill.
6)      Cook until meat is no longer pink.

7)      Serve.
