Grilled Sausages Tossed With Tomato Couscous
8:21 AMWho doesn’t love grilled sausage? You can find sausage just about any way you like it these days. This household seems to like all variations, but the healthiest seems to be turkey.
I absolutely love couscous and so does the family. The kids think it’s neat to eat, which makes it easy for me. It’s a healthy alternative and a staple.
When I found a dish in Food & Wine that used both sausage and couscous, you can imagine how happy I was! I made a few changes here and there and cut out some ingredients. We were all very pleased and I have some leftovers to eat for lunch!
What You Will Need:
1 lb sweet Italian turkey sausage links
1 14.5 oz can petit diced tomatoes
1 C uncooked couscous
What You Already Have:
3 garlic cloves, minced
1 T olive oil
Dash of cayenne pepper
½ tsp cumin
½ tsp salt
½ C water
½ tsp dried parsley
1 large skillet with lid
1) Heat olive oil over medium heat.
2) Add garlic and cook for 1 minute.
3) Add couscous, salt, cayenne, and cumin. Stir until slightly browned.
4) Stir in tomatoes with juice and water. Simmer then cover.
5) Remove from heat and set aside covered.
6) Prepare grill. Grill sausages until cooked through.
7) If charred, bring inside and microwave for 1 minute to make sure fully cooked.
8) Slice sausages into 1 inch pieces and toss with couscous.
9) Garnish with parsley.
10) Serve.

It's so true. Sausages are so versatile and such an easy meat to add to anything. It's great that they come in so many varieties too.....chicken, pork, beef etc.
