Chicken Pasta with Feta and Tomatoes

This is a dish I’ve made since I can remember.  It’s so simple and tasty.  My mom used to make a variation of this with shrimp.  It was my brother’s and my favorite meal.  We requested it for birthday dinners and any special occasion.
I think I’ve hinted that spaghetti is a favorite pasta in our house now.  Technically I use either angel hair, vermicelli or thin spaghetti.  I’ve never been a fan of “thick” noodles.  My mom raised me that way and I guess I’ve passed it on to my kids.

What You Will Need:
2-3 boneless, skinless chicken breasts, cut into 1 inch pieces
1 bunch of scallions, thinly sliced (remove root and top of stem)

3 oz Reduced-Fat Feta Cheese
What You Already Have:
1 T olive oil
2 garlic cloves, chopped
½ box whole wheat thin spaghetti
**1 (14.5 oz) petit diced tomatoes
1 tsp dried Italian Seasoning
Dash of pepper
Large skillet
Large pot
**Note: You shouldn’t need salt because it is already in the tomatoes.  To cut back even more, use tomatoes with no salt added.
1)      Heat olive oil in skillet over medium heat.
2)      Add garlic and cook for 1 minute. 
3)      Add chicken a brown until no longer pink.

4)      Add tomatoes, scallions and seasoning.  Season with pepper.

5)      Bring to boil and then simmer.
6)      While sauce is cooking, bring water to boil in large pot.
7)      Cook pasta according to package directions.  Drain and add back to pot.
8)      Pour sauce into pot with pasta and sprinkle with cheese.  Mix well.

9)      Serve.
