Quinoa Burgers

We ate lunch at a local spot recently that specializes in vegetarian delights.  My husband tried their quinoa burger!  I was so surprised by his courage that I decided to test it out on the whole family.  I found this recipe from Martha Stewart.  All of us tried it, but the Oldest was not convinced.  My husband, Wee Bit and I might indulge in seconds.  I thought it was a great alternative to Boca Burgers.  You won’t see me transporting those to my next cookout.  If it’s a veggie burger I crave, I will bring one of these babies.  This recipe makes eight, which you can individually wrap and freeze and cook when ready!
What You Will Need:

2 C cooked quinoa
 1 (14 oz) can chickpeas
1 handful baby carrots
½ yellow onion, chopped
1 shallot, chopped
What You Already Have:
1 slice of whole grain bread
1 egg
2 tsp cumin
1 tsp salt
Olive oil
Food processor
Large non-stick skillet
Aluminum foil
Plate
Ketchup
Mustard
Hamburger buns or lettuce
1)      Prepare quinoa.
2)      Finely chop carrots in food processor. 
3)      Add quinoa, chickpeas, onion, shallot, bread, egg, cumin, salt and pepper.

4)      Puree until almost smooth.
5)      Form into eight patties.

6)      Heat 1 T olive oil over medium heat.  Add two patties.  Cook for about 7-8 minutes per side or until browned.  Repeat until all patties are cooked.  Keep warm on plate covered with foil.
7)      Serve in buns or lettuce wraps with ketchup and mustard.
