Prosciutto, Pesto and Mozzarella Pizza

Pizza night doesn’t always have to be shredded cheese, pepperoni and tomato sauce.  Mix it up every now and then.  Combine other easy toppings to make a gourmet meal for you and your family.  Mother’s Day is just a few days away, take a break.  Lay these ingredients on the counter and let your kids create a masterpiece.
What You Will Need:
Pesto sauce (see recipe below)
Boboli thin crust pizza
Fresh mozzarella
Tomato, thinly sliced
Shredded mozzarella, sliced
2 slices of prosciutto, coarsely chopped
Red onion, thinly sliced
Baking sheet

1)      Preheat the oven to 450˚.
2)      Prepare pesto (recipe below).
3)      Spread 2-3 T pesto over pizza crust.
4)      Top with mozzarella, tomatoes, red onion and prosciutto.
5)      Bake for 10-12 minutes.
6)      Let stand for 2 minutes.
7)      Slice and serve.
Pesto Sauce
Handful of sundried tomatoes
1 C fresh basil
¼ C pine nutes
1 garlic clove
½ C grated parmesan
3 T olive oil
Food processor
1)      Heat skillet over medium-high heat.  Toast pine nuts for 1 minute.
2)      Add all ingredients except olive oil into food processor.
3)      Puree and gradually add olive oil.
4)      Store in air-tight container.
