Grilled Broccolini and Sausage Pasta

Have you ever tried grilled broccolini?  It is already my favorite veggie and might be my favorite food when grilled.  Toss it in some olive oil and sprinkle with a little s&p.  Transfer it to a grill and cook for about 8 minutes.  Oh, it is sooooo good and perfect for spring.
If you’ve been looking for a great brunch dish to serve on Mother’s Day, you’ve come to the right place.  The colors in this dish are vibrant and the flavors are effortless.  Your mom will be so impressed.  You can have this ready before everyone arrives, so you can visit with your mom the whole time.  Thank you Samantha Seneviratne from for your inspiration!
What You Will Need:

½ lb broccolini
4 sweet Italian chicken sausages
½ lb mini piccolini pasta
½ C chopped green olives
2 T capers
2 T red wine vinegar
Olive oil
Salt and pepper
Grill or grill pan
Grated Romano/Parmesan blend for garnish
1)      Prepare your grill.
2)      Mix olives, capers, vinegar and 2 T olive oil in large bowl.  Set aside.

3)      Rinse broccolini.  Place broccolini on platter and drizzle with olive oil.  Sprinkle with salt and pepper.

4)      Grill sausages and broccolini until done.  Let cool.
5)      Cook pasta according to package directions.
6)      Chop sausages and broccolini and add to olive mixture. 

7)      Toss with pasta.
8)      Serve with cheese.
