Cheesy Spaghetti
2:18 PMI was looking for a side dish to go with leftover meatloaf and realized this recipe was easy enough. After preparing it, I decided we could eat this with some leftover broccoli and green beans and be set. The pasta is so cheesy and rich; you don’t need another heavy dish with it. I knew everyone would be a fan because the kids love spaghetti. This is the Italian version of our Mac and Cheese too, another favorite in our house. The combination of the two was a sure bet. Everyone had seconds.
What You Will Need:
½ box whole grain thin spaghetti
1 ½ C grated parmesan
Basil for garnish
What You Already Have:
1 tsp black pepper
3 T butter, diced
Large skillet
Large pot
Colander
1) Prepare pasta according to package directions. Reserve 1 C of water before draining.
2) Melt 2 T butter in skillet over medium heat.
Add pepper and stir.
3) Add cooked pasta, ¾ C pasta water and remaining butter to skillet. Stir.
4) Lower heat and add cheese. Stir until all pasta is covered in cheese.
5) Remove from heat.
6) Serve. Garnish with basil.
