BBQ Meatballs with Rice Noodles

You can serve these meatballs either as an appetizer or as a meal.  After you make them, let them soak in the sauce in the fridge.  They’re extra flavorful when you heat them back up and serve.
We ate them as dinner one night last week and they were a hit.  Pour them over some rice noodles and sweet peas for an Asian delight!  My kids think rice noodles are the coolest things.  Topped with these delicious meatballs, they think they’re having spaghetti and meatballs with a twist!
What You Will Need:


I changed my mind about the hot sauce to spare the kids' tastebuds.
1 lb ground chicken
½ bag rice noodles
What You Already Have:
1 egg
2 pieces of bread, chopped into fine crumbs
½ medium yellow onion, finely chopped

1 garlic clove, finely chopped
1 tsp chili powder
2 T applesauce
Dash of salt
Large bowl
Large pot
 2 frying pans
Small bowl
Medium bowl
Olive oil
½ C ketchup
¼ C Dijon mustard
1 C taco sauce
½ C sugar
½ C molasses
¼ C vegetable oil
2 T vinegar, preferably apple cider
2 T soy sauce
Dash dried oregano
Dash of Smoked Tabasco
1)      Mix ground chicken, egg, breadcrumbs, garlic, onion, chili powder, applesauce, and salt in large bowl.
2)      Make about 16-18 meatballs.

3)      Heat 1 ½ T of olive oil over medium heat in each frying pan.
4)      Brown ½ of meatballs in one pan and other half in other pan.  Make sure you thoroughly brown on all sides.

5)      Transfer ½ of meatballs to other pan, so all meatballs are in one pan.  Lower heat.

6)      In small bowl, mix ketchup, mustard, sugar, taco sauce, soy sauce, vinegar, vegetable oil, molasses, oregano and hot sauce.

7)      Pour sauce over meatballs and heat through.
8)      Boil half a large pot of water.
9)      Add dried rice noodles to medium bowl in sink.  Pour boiling water over top and heat for 3 minutes.  Drain.
10)   Serve with meatballs and peas.
