Thank Goodness for Tuna Casserole

I wasn’t able to get to the store until yesterday, so I had to come up with some pretty interesting dinners at the beginning of the week.  Thankfully I found a large can of tuna and half a box of fettuccine. You see where I’m going with this one, right?
I was able to make this tuna casserole surprisingly scrummy.  My husband and I knew what to expect, but were amazed when it turned out to be really good.  Whenever the Oldest sees any long pasta, she immediately assumes we’re having spaghetti.  Project Disguise worked in my favor and I wasn’t trying to fool anyone.  Wee Bit shoveled it in before really tasting anything, so we were golden on all fronts.
What You Will Need and Already Have:

1 (12 oz) can of tuna, drained
½ box fettuccine
1 yellow onion, chopped
1 (14.5 oz) can of whole green beans, drained
4 T butter
Can’t Believe It’s Not Butter Spray (Had to)
¼ C flour
1 C chicken broth
½ C milk
¼ tsp nutmeg
2 pieces of day old bread
1 C shredded cheddar cheese
Salt and pepper
Large pot
Large skillet
Small skillet
Colander
Non-stick cooking spray
Large casserole dish
Food processor
1)      Preheat oven to 375˚.
2)      Cook pasta according to package directions.
3)      Melt 1T butter in large skillet.  Add onions and cook until transparent.

4)      In small skillet, melt 3 T butter.  Add flour and gradually whisk in broth.  Slowly add milk to mixture and continue to whisk.  Season with salt, pepper and nutmeg.

5)      Drain pasta and pour back into large pot.  Add flour mixture to pasta and stir in tuna and green beans.  Mix well.

6)      Add bread to food processor.  Chop until small crumbs form.
7)      Add cheese to bread crumbs and pulse until mixed well.
8)      Coat casserole with cooking spray.  Add pasta mixture to dish.  Sprinkle breadcrumb mixture over noodles.  Spray with butter spray.

9)      Bake for 20-25 minutes.

  7. Hmm... I'm a skeptic! I can remember tuna helper as a child and hating it... however this does look a bit better and we're on a budget so I may actually attempt this one soon. Thanks for the idea :)
