Shrimptastic Pasta

Are you ready for another winner?  You are going to impress your family with this special dish.  When I was little, my mom would prepare a similar dish for us on special occasions.  It was her version of “Shrimp Scampi”.  Her version included tomatoes unlike most restaurants.  We would walk into the kitchen and drool from the smell filling the room.  It still is one of my favorites.
This dish is inspired by my mom.  I adapted a recipe from www.finecooking.com, my new favorite recipe source!
What You Will Need:

1 lb peeled and deveined shrimp (you can do it yourself to save a few bucks)
1 T Lemon Pepper grill seasoning
¾ lb whole wheat thin spaghetti pasta
4 oz mascarpone cheese
What You Already Have
1 T butter
½ tsp crushed red pepper
2 large garlic cloves, chopped
¾ C low sodium chicken broth
1 T dried chopped chives
Large Pot
Medium bowl
Large skillet
Salt
1)      Bring 2 quarts salted water to boil.  Cook spaghetti according to package directions.  Drain and reserve.
2)      Add shrimp to medium bowl.  Sprinkle grill seasoning making sure all shrimp are seasoned.  Set aside.

3)      Melt butter in large skillet over medium heat.  Add garlic and crushed red pepper.  Cook until garlic is tender.

4)      Add shrimp and cook until almost cooked through.

5)      Add broth and bring to boil.  Cook until shrimp is cooked through.

6)      Lower heat to simmer and stir in pasta, mascarpone and chives.  Add mixture to large pot and stir until pasta is coated.


7)      Serve with sweet peas and garlic bread.
