Sausage Escarole Toss

We’re on a spring time roll in Richmond, Virginia.  The weather is in full effect; trees are turning green; the birds are chirping.  It’s wonderful.  I love the tulips that I planted last fall.  We even have some random ones popping up from the previous homeowner.  It’s gorgeous around here.  It really puts you in the mood.
I searched for spring-themed recipes for the week and discovered this beautiful dish with escarole and sausage in Bon Appetit.  I know the sausage sounds heavy, but it’s really delightful.  You’ll see.  The colors are perfect for this time of year and it’s such a satisfying, well-rounded dinner.
What You Will Need:

¾ lb of pasta shells
1 lb hot Italian turkey sausage, casings removed
1 head of escarole, sliced
1 red onion, cut into thin wedges
1 tsp caraway seeds
4 oz ready-to-eat sun dried tomatoes, thinly sliced
What You Already Have:
Grated Parmesan/Romano cheese blend for garnish
Salt
1 T olive oil
Large pot
Large skillet
Slotted spoon
Colander
1)      Fill large pot halfway with water and salt.  Bring to boil.
2)      Add escarole and cook for 5 minutes.  Transfer to colander with slotted spoon and keep water boiling.


3)      Add pasta and cook according to directions.  Reserve 1 C of water before draining.
4)      Heat olive oil over medium-high heat.  Add sausage and brown. 

5)      Add onion and caraway seeds to sausage and cook for another 5-10 minutes.

6)      Add escarole, ½ C water and tomatoes and mix well.  Add more water if too thick.

7)      Add pasta back to large pot and stir in sausage mixture.  Toss with cheese.
8)      Serve.

    ps. milkfish is a large bony, silvery fish found in the South Pacific and Indian oceans...nowadays they are usually being sold deboned (marinated/smoked/whole or not). it's pretty common in our place; and way cheaper than salmon, lol. of course, salmon tastes way different, too. ;)
