Pizza Panzanella

What better way to incorporate salad into meal time than with panzanella?  Panzanella is traditionally an Italian bread salad featuring tomatoes, basil and vinegar.  You might remember A Little More than Just Bread Salad when I added canned tuna and olives.  I found today’s recipe in Self when searching for a healthy spring dish.  A friend joined us for dinner and described it as a deconstructed pizza.  You’ll love this recipe. 
What You Will Need:

¾ Tuscan boule, about 4 C, diced
½ pint of grape tomatoes, halved
25 slices of Turkey pepperoni, thinly sliced
1 C fresh basil, coarsely chopped
2 roasted red peppers, coarsely chopped
1 small red onion, thinly sliced
1 C fresh mozzarella, coarsely chopped
¼ C red wine vinegar
¼ C low sodium chicken broth
What You Already Have:
Large bowl
Plastic wrap
1)      Toss all ingredients in large bowl.  Cover with plastic wrap and chill for an hour or more.


2)      Serve.
