Fish Tacos

I knew I wanted to make some sort of taco this weekend, but I couldn’t decide if it should be heavy or light.  The weather made that decision easier for me.  So I planned the menu accordingly and picked up some fish at the market for these refreshing tacos.  You’re going to love the flavors in this recipe.  I was a bit skeptical about the mango because I had to salvage the ripest parts of the fruit for this salsa, but it turned out perfectly.  We all agreed this definitely beats our local chain’s fish tacos.  Sorry y’all! Give ‘em a try!  The best part about this recipe is that it is simple!  It’s adapted from a SELF magazine submission from 2006.
What You Will Need:

¾ lb tilapia
1 (14.5 oz) can petit diced tomatoes, drained
2 T fresh cilantro, finely chopped
2 limes

1 C green cabbage, sliced
1 mango, diced
What You Already Have:
1 onion, finely chopped
2 T olive oil
½ tsp mild chili powder
6 flour tortillas
Mexican blend shredded cheese for garnish
Sour cream for garnish
Aluminum foil
Shallow casserole

Grill
1)      Prepare salsa.  Mix mango, tomatoes, onion, cilantro and juice from one lime in small bowl.

2)      Prepare grill and preheat oven to 350˚.
3)      Transfer fish to casserole.
4)      In small bowl, whisk together olive oil, juice from one lime and chili powder.

5)      Brush marinade on both sides of fish.  Pour remaining marinade over fish.
6)      Wrap tortillas in aluminum foil.  Cook in oven for 10 minutes.
7)      Grill fish about 3 minutes a side.
8)      Shred and serve with tortillas, salsa, cabbage, cheese and sour cream.
