European Chicken Salad

Stop by your local Farmer’s Market for all of the ingredients for the salad.  It’s healthy, full of flavor and filling.  You won’t be hungry after a serving of this European salad.  The dressing is light, but is packed with zest that will satisfy.  I was very worried when I served this to the kids, but they loved the chicken.  They weren’t so sure about the olives and fennel though.
I would recommend offering this at your next tailgate or brunch, but not as the main dish.  It’s a great side salad.
I took a few shortcuts, but you don’t have to.  It’s very easy and quick!  A great seasonal dish from Parade.
What You Will Need:

1 lb thin, skinless and boneless chicken breasts
1 large fennel bulb, chop, separate fern from stalk
1 handful sliced black olives
1 (14.5 oz) can whole green beans
3 T capers
½ pint grape tomatoes, halved
What You Already Have:
1 T Lemon Pepper grill seasoning
Grill or grill pan
1 T lemon juice
1 T Dijon mustard
¼ tsp sugar
¼ tsp salt
¼ tsp pepper
2 T olive oil
Whisk
Small bowl
Large bowl
1)      Season chicken with poultry seasoning and prepare grill.
2)      Grill chicken until cooked through.  Set aside.

3)      In small bowl, whisk together lemon juice, sugar, Dijon mustard, salt, pepper and olive oil.  Set aside.

4)      In large bowl, add fennel fern, tomatoes, green beans, olives, and capers.

5)      Slice chicken and add to vegetables.

6)      Stir in dressing.  Cover and chill.
7)      Serve chilled.
