Authentic Carbonara

If you haven’t already noticed, we love pasta in our house.  I know my kids will eat their dinner when it involves pasta.  I have always wanted to try my own carbonara and had the perfect opportunity this weekend.  I made it fun by using bow-tie pasta!  The smell of bacon filled the house and made my mouth water.  It was difficult not eating all of it before mixing it in with the pasta.  Thank you Jeanne Thiel Kelley and Bon Appetit!
This recipe makes plenty of food, so you will have leftovers.  You’re in luck because it was even tastier the next day.  Stir in some cooked sweet peas for some color and you’re set for another dinner.
What You Will Need:

½ box of bowtie pasta
¾ C grated parmesan
2 eggs
1 yellow onion, chopped
4-5 slices of bacon
What You Already Have:
Dried parsley
Large skillet
Large pot
Medium bowl
Plate lined with paper towel
1)      Cook bacon in large skillet over medium heat.   Transfer to plate when crisp.  Reserve fat.

2)      Cook onion in skillet with remaining bacon fat for 5 minutes.  Remove from heat.
3)      Cook pasta.  Reserve 1 C of pasta water before draining and set aside.
4)      Add pasta back to skillet with onions.
5)      Whisk eggs and cheese together in medium bowl.  Stir in ¼ C pasta water.

6)      Stir egg mixture into pasta mixture and turn heat to low.  Continue stirring.  Add more pasta water if sauces is too thick.  Continue to stir until egg has had time to cook.  (About 5 minutes)

7)      Add bacon and sprinkle with parsley and mix well.
8)      Serve.
