Lazy Day Stew
1:35 PMI made this soup during our “Chicken-Free” week. It’s perfect for a day like today when it’s cloudy and kind of chilly. It can’t decide if it wants to rain or not. The aroma from this soup fills up the house with smells that remind me of Italy and something you would find in a magazine like Gourmet. The recipe is extremely easy, which will allow for total laziness. All I want to do is snuggle up on the couch, eat this soup and watch soaps. A girl can dream. I’ll live vicariously through those of you without the two rugrats. Make sure you report back to me and fill me in on Days.
What You Will Need:
2 cans of cannellini beans
1 (14.5 oz) can of stewed tomatoes
½ lb of baked ham, smoked flavor- cut into bite-size pieces
8 oz fresh arugula
24 oz. chicken broth
What You Already Have at Home:
2-3 garlic cloves, coarsely chopped
pepper
¼ C olive oil
Large pot
Large spoon
1) Heat oil over medium-high heat. Add garlic and cook for about 1 minute.
2) Add tomatoes with juices to pot. Mash with large spoon.
3) Add beans, ham, and broth. Bring to boil.
4) Reduce and simmer for 5-10 minutes.
5) Add arugula and cook until wilted.
6) Season with pepper.
7) Serve.
