Jazzy Jambalaya

I’ve been trying to make jambalaya for the past month, but no one was in the mood when I brought it up.  I had all of the fixins for this comfort food, so I went ahead and made it last weekend.  No matter how little you try to make, you can be sure you’ll have leftovers.  Leftovers are not such a bad thing with this stuff though.  I’m the guilty one who picks through for the sausage. J  When we finally sat down to eat it, my husband had seconds.  The girls picked through it.  All in all, I think this dish satisfies most because it’s got a little bit of everything.
It’s also extremely easy to make.  You’re basically cooking rice, but adding a bunch of other treats to it.
What You Will Need:

½ - ¾ lb thinly sliced chicken breast, cut into cubes
1 lb smoked Italian sausage, cut into 1 inch pieces
1 green bell pepper, chopped
2 carrots, thinly sliced
2 celery stalks, thinly sliced
1 medium yellow onion, chopped
1 jar of sliced mushrooms, drained
What You Already Have:
2 C uncooked rice (use whatever you have on hand- long grain preferred)
3-3 ¼ C chicken broth
Salt and pepper
2 T vegetable oil
Dash of cayenne pepper
Large pot
1)      Heat oil over medium heat.  Add onion and cook for 5 minutes.
2)      Add chicken and brown.
3)      Add carrots, celery, onion, mushrooms, green pepper and sausage.  Turn heat down to low.

4)      Pour in the rice and broth and bring to a boil.  Season with salt, pepper and cayenne.  Cover and simmer for 20-25 minutes.
