Grilled Asian Burgers with Rice Noodle Salad

I came across this Gourmet Asian-inspired recipe for chicken burgers while looking for light dish to satisfy our Spring appetites.  This dish is perfect for any evening whether you are entertaining or want to enjoy a night at home with the family.  The skewers make it fun for the kids and the salad is so refreshing.  It reminds my husband and me of our favorite local Vietnamese restaurant.  You can’t beat their grill platters… this comes pretty close.
Set aside an hour to prepare this delight and have the vegetables chopped and ready to make your life easier.
What You Will Need:

1 lb ground chicken
1 (8 oz) can of sliced water chestnuts, drained
1 bunch of green onions, chopped
About 1 T fresh cilantro, chopped
2 carrots, peeled and grated
1 (7 oz) bag of rice noodles, cut in half with scissors
What You Already Have:
1 garlic clove, chopped
¼ C soy sauce
¼ C rice wine vinegar
1/8 C sesame oil
½ tsp dried ginger
1 tsp crushed red pepper flakes, divided
Large pot
1 medium bowl
2 Large bowls
Grill pan (or outdoor grill)
Non-stick cooking spray
Wooden skewers
Large casserole to soak skewers
Food processor
1)      Prepare grill pan.  Coat grill pan with non-stick cooking spray.
2)      Soak wooden skewers in water in large casserole until ready to use.

3)      Chop water chestnuts, 1/2 red pepper, cilantro, 3/4s of green onions in food processor.

4)      In medium bowl, mix chicken and water chestnut mixture.

5)      Form chicken mixture into at least 12 patties.  Skewer patties (3 to a skewer).
6)      Grill patties.  Transfer to platter and keep warm.
7)      Meanwhile, boil about 2 quarts of water in large pot.  Add rice noodles to large bowl.  Cover with boiling water and let stand for 5-8 minutes.  Drain in strainer.
8)      Mix soy sauce, vinegar, oil, ginger and garlic in large bowl.  Add rice noodles, carrots and remaining onions and red pepper and stir together.

9)      Serve burgers over noodles.
