Easy Pasta Primavera

After a week without chicken, I brought it back into the menu.  We needed a change.  I’ve learned it’s not so bad after all.  In fact, I think I missed it.
I wanted to use whatever we had left in the fridge.  Project Disguise was in full force, so I also tried to hide some veggies in the sauce.  The kids attacked the dish.  Success.  My husband and I liked it too.
What You Will Need and You Already Have:

3-4 chicken breasts, boneless and skinless, cooked and cut into bite-size pieces
½ lb whole wheat pasta
½ red onion, chopped
½ yellow onion, chopped
1 large carrot, chopped
½ green pepper, chopped
2 T fresh rosemary
2 T fresh thyme
2 T fresh parsley
1 (14.5 oz) can petite diced tomatoes
1 (10 oz) can tomato sauce
1 large clove of garlic, minced
1 tsp dried basil
1 tsp dried oregano
1 T olive oil
parmesan cheese
1 large sauce pan
1 large pot
Strainer
1)      Heat olive oil in sauce pan over medium-high heat.

2)      Add carrots, pepper, onion, and garlic to pan and cook for about 10 minutes over medium heat.
3)      Add diced tomatoes, tomato sauce, and herbs to pan.  Bring to boil and reduce to simmer.

4)      Cook pasta according to package directions. Drain.
5)      Mean while, add chicken to sauce and cook until heated through. (About 10 mins)

6)      Serve over pasta and garnish with parmesan.
