Angelic Meatballs

I was so happy to come home after my mini-vacation to find leftovers from the night before I left.   The perfect comfort food for me is spaghetti and meatballs.  The great thing about meatballs is that you really can’t mess them up and you can make them with any protein you like.  I happened to make these suckers with ground turkey.  I found an easy recipe from Cooking Light, which means these were practically GOOD for me too.  What a great treat after a weekend of pizza and bagels.
What You Will Need:

1 lb ground turkey
½ C grated parmesan
What You Already Have:
½ C bread crumbs (chop up whatever leftover bread you have and add dash of Italian seasoning)
1 tsp dried parsley
½ tsp dried basil
2 egg whites
1/3 C olive oil
1 (28 oz) can tomato sauce
½ lb cooked angel hair pasta
Large bowl
Large skillet with lid
Large pot
1)      Mix turkey, breadcrumbs, parmesan, parsley, basil and eggs and form into at least 1 dozen balls.

2)      Heat olive oil over medium-high heat.  Add meatballs to skillet.  Brown on all sides.
3)      Add tomato sauce to skillet.  Bring to a boil.  Cover and simmer for 15 minutes.

4)      Serve over top of pasta.
