Smoked Salmon Sammy

Instead of coming up with the same old thing for Wine Club, I wanted to make something different and heartier.  I usually take a dip or a dessert.  I searched through lots of food sites for a quick and easy appetizer and didn’t like what I saw.  It had to be pretty.  I came across this sandwich on www.epicurious.com and decided to make a bunch of mini open-faced sandwiches instead.  I probably should have stuck with the original size and not made them so far in advance.  By the time I took a bite of one, they were too cold.  I know the sandwich would have been perfect.  The mini-bites needed more bagel and less salmon.  My review might sound a bit negative, but I’m recommending the SANDWICH.  The combination is great!
What You Will Need:

1 pkg smoked salmon, pre-sliced (in your grocer’s seafood section)
3 avocados
½ red onion, sliced
Capers
4 plain bagels
1 lemon
What You Already Have:
Baking sheet
Platter
Medium bowl
1)      Preheat broiler to high.
2)      Slice bagels in half and place on baking sheet.
3)      Toast for 2 minutes.
4)      In medium bowl, mash avocados.
5)      Add juice from half of lemon to avocados.
6)      Smear mashed avocado on half of each bagel.
7)      Top with onion and salmon. 
8)      Place second half of bagel over to make a sandwich.  Serve with capers and lemons as garnish.
