Sinful Salad

We had the best dinner last night.  It was so rich and so filling, I’m stuffed just thinking about it.  Would you believe that a salad is the culprit?  Oh my, it was good.  This isn’t one of those salads you eat when you’re on a diet.  This is one of those salads that probably shouldn’t be called a salad because it’s definitely not healthy.  You associate salads with good for you.  I guess it’s got some nutritional benefits because it is loaded with mixed greens.  It looks like a salad. 
Let me get right to it because you should go to the store during your lunch break or right after work and make it tonight.  You’ve got to try it… but again, not if you’re on a diet.  I’d assume Sara Tenaglia wasn’t when she thought of it.
What You Will Need:
6 pack of smoked hot Italian sausage (you could use whatever kind of sausage your prefer)
1 large red onion
1 container of mixed greens
4 oz plain goat cheese
4 shallots, finely chopped
7 T olive oil
1 C pomegranate juice
1 T dried mint
1 T cumin
4 T red wine vinegar
Dash of salt and pepper
Small pot
Small container with a lid
Large bowl
1)      Prepare dressing first.
2)      Boil pomegranate juice in small pot over medium heat until it reduces to a syrup.  Stir continuously to avoid burning.  Remove from heat.
3)      Add olive oil, vinegar, mint, shallots, cumin, and about 3 T of syrup to container.   Cover with lid and shake.  Set aside.
4)      Prepare grill for sausages and onions.  Add sausages to bottom rack and onions to top rack.  If you do not have a top rack, add onions after sausages have been cooking for 5 minutes.
5)      Grill for another 10 minutes, making sure cooked through on all sides.  Let cool. 
6)      Add mixed greens to large bowl.  Toss with half of dressing.  Store remaining dressing in refrigerator.  Will keep for about a week.
7)      Crumble goat cheese and toss with salad.
8)      Cut sausages into 1-inch pieces and roughly chop onions.  Toss into salad.
9)      Serve.

    I'd say this looks good..but I don't eat salads. But if I did, I'm sure it would be delicious! :)
