Pomegranate Pasta Salad

One of my favorite easy dishes to make is pasta salad. I don’t like the creamy kind that you find in the grocery store. I like the ones with a vinaigrette. Here’s a chance to use your extras if you haven’t already finished it off. This is also a great finger food for little ones and you can add whatever type of protein you wish. We have a shellfish allergy in our house, which leaves me with chicken most of the time. It’s just easier anyway.
What You Will Need:
½ lb orzo, cooked and cooled
1 lb baked or grilled chicken, cut up into 1-inch pieces
1 pint of grape or cherry tomatoes, cut in half
1 C of fresh basil
½ C kalamata olives, pitted and cut in half
¾ C of fresh mozzarella mini-balls
1) Mix all ingredients and chill.
2) Serve with bread.
