Pesto and Goat Cheese Crostini

10:07 AM

I already posted about my love for basil a few days ago.  I made this dynamite pesto using sun-dried tomatoes and walnuts as a twist.  Add a generous tablespoon to ½ a box of cooked pasta with ½ cup of pasta water and you’ll be treating yourself to some authentic Italian.
Another great way to serve this treasure is alla crostini.  Heat your broiler on High.  Cut up one baguette and place slices on baking sheet.  Broil until slightly toasted.  Remove from oven and slather on some pesto.  Put back into the oven and broil for another 2 minutes.  Remove and dab some plain goat cheese on top.
You’ll surprise your mouth with lots of flavor.  It’s a great quick appetizer for any dinner party, casual or fancy.
Buon Appetito!
