Awesome Apple Mini-Muffins

When I go to the grocery store, I try my darndest to stick with my list and to remember everything we’ll need for the week.  My time is very limited and I’d like to use whatever free time I have doing more than going to the grocery store or Target.  I like to stock up on fruit and veggies even if I don’t plan to use them in a recipe.  We can munch on those for snack or use them as a side.  Apples are one of our favorites, which I’ve already talked about here.  I buy a bag of apples because my oldest loves acting out Snow White and the whole “poison apple” scenario.  I have a few extra hanging around this week, so I decided to bake some muffins this morning.  It’s a nice change from pancakes and the kids can eat them as a snack.
I made mini-muffins to make it fun for the kids too.
I found a quick recipe in Stuffed Cougar Too and adapted it using what I had on hand.  Thank you Virginia Chewning.
What You Will Need and Might Already Have:

1 C all purpose flour
½ tsp baking soda
1 ½ tsp baking powder
½ tsp salt
1 T light brown sugar
½ tsp cinnamon
2 medium apples, grated
3 T butter, melted
1 egg
½ C skim milk
1 T light maple syrup
Large bowl
Muffin pans, greased
1)      Preheat oven to 375˚.

2)      Mix flour, baking soda, baking powder, salt, brown sugar and cinnamon in large bowl.

3)      Stir in eggs, butter and milk.  Whisk until blended, but not too runny.

4)      Add syrup.

5)      Fold in apples.

6)      Fill muffins pans and bake for about 15-17 minutes.

7)      Cool.  Remove from pans and serve warm.
