Sundried Tomato and Walnut Pesto
11:36 AMBasil is my super hero in the kitchen. It’s so versatile. It can serve as a plant to brighten up the room with its bold green color. The fragrance is captivating and draws you into the kitchen. I love adding it to dishes for freshness. When a recipe calls for a little basil, go ahead and buy the whole plant or grow some of your own. If you find you need to use it up quickly, make pesto!
Pesto can be added to so many dishes too. It’s simple, delicious and easy to make. A standard pesto recipe uses basil, pine nuts, olive oil, garlic and parmesan cheese. I’ve changed it up using the things I had on hand. Stir it in with some pasta and you’ve made dinner!
1 C fresh basil
1 large clove of garlic
3 T olive oil
½ C parmesan cheese, grated
½ C walnuts
Handful sundried tomatoes
Food processor
1) Add all ingredients except for olive oil into food processor.
