Slow-Cooked Pork and Apricots

The house has been sick again, which means I’ve been stuck at the house or the office with no time to cook.  I found a recipe with ingredients that I already had at home.  This helped me tremendously because I didn’t have to go to the store and it was a Crockpot ONE POT WONDER.  Hallelujah.  I threw everything together, turned the pot on Low and was able to tend to everyone’s needs.  It turned out pretty tasty.  By this point, all that mattered was how easy it was.
Serve it over plain couscous.
What You Will Need:

1 ½ lb pork tenderloin, cut into 2 inch pieces
1 bag (2 C) dried apricots
1 large Vidalia onion, chopped
3 sweet potatoes
1 can low sodium chicken broth
1 (6 oz) can tomato paste
What You Already Have at Home:
1 T garlic, minced
1 tsp all spice
1 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
1 bay leaf
1 tsp garlic salt
Slow cooker
1)      Mix everything in slow cooker.  Make sure sweet potatoes lay over top.

2)      Turn on low and cook for 9 hours.
3)      Remove sweet potatoes.  Peel sweet potatoes.  The skin should come off easily.

4)      Stir pork mixture.  Pork should break up as you mix.
5)      Cut up sweet potatoes into 1 inch pieces and mix back into pot.
6)      Serve over top couscous.
