"This Isn't Take-out?" Fried Rice

Another pleasant surprise for dinner tonight!  My oldest, husband and I couldn’t believe we were eating homemade fried rice.  It tasted just as good as takeout from our neighborhood Chinese restaurant.  The best part is it’s SUPER-EASY!!!!
I had 5 minute rice in the pantry, so I cooked 2 cups of dried rice to make enough for the recipe.  Make it earlier in the day and refrigerate in time for dinner.  It’s quick and is all you need for this dish.
I also bought about 1 lb of pork; seasoned it with salt and pepper; cooked it in the skillet with some olive oil for about 3 minutes a side or until completely cooked.  I let it cool and diced it up for the recipe.
What You Will Need:

1 C pork, cooked and diced
4 C rice, cooked and cold
1 bunch scallions, chopped
1 ½ c frozen peas and carrots, thawed
What You Might Already Have:
2 eggs, beaten
2 T olive oil
4 T soy sauce
4 T water
Large skillet
Small bowl
1)      Heat 1 T olive oil over medium-high heat.  Add scallions and eggs.  Brown eggs.
2)      Add pork, peas, carrots and rice until rice is slightly crispy.

3)      Mix soy sauce and water in small bowl.
4)      Pour over top of rice mixture.  Mix until all rice is brown.  Season with salt and pepper.
5)      Serve.
