Simple Chicken Piccata

During the holidays, it’s hard to think of something to cook when you’ve been baking and cooking all day long or you’ve been eating out constantly.  Try this...  My husband and I ate at my favorite local Italian restaurant for his “Office” party last week and I ordered the Veal Piccata.  I wanted to taste that incredibly yummy dish again but without the price tag.  It had to be family-friendly too.  I found this great recipe on (shocker) Epicurious.com.
What You Will Need:

4 chicken breasts, boneless and skinless (tip: if you can find pre-packaged Italian style, great for this recipe)
1 lemon
3 ½  T flour
3 T butter
2 T olive oil
1/3 C white wine
¼ C chicken broth
¼ C drained capers
Dried parsley
2 large skillets or one x-large skillet
Shallow baking dish
Small microwaveable bowl
Plastic wrap
1)      Pound chicken until ¼ inch thick between two sheets of plastic wrap.
2)      Cover bottom of baking dish with 2 T flour.  Coat chicken in flour and set aside.
3)      Melt 1 T butter in microwave for 20 seconds.
4)      Whisk in 1 ½ T flour to butter.  Set aside.
5)      Heat olive oil in two skillets or one x-large skillet.  Add chicken to skillet and cook until nicely browned and cooked through.  (About 3-4 minutes a side)

6)      Remove chicken from skillets and tent with foil to keep warm.
7)      In one of skillets, bring broth, wine and juice from lemon to boil for a minute.  Whisk the butter-flour mixture until thickened.
8)      Stir in capers and remaining butter.  Remove from heat.

9)      Pour sauce over chicken and serve.
