My Favorite Cookie- The Snickerdoodle

Thank you Martha Stewart for reminding me how much I love these simply, perfect cookies.  They remind me of my childhood.  The chewy center of the cookie and the spiciness of the cinnamon mixed with the buttery gooiness and sweet sugary crispiness of the outside are all I need in a cookie.  I’m not asking much.
What You Will Need and Might Already Have:

2 sticks of unsalted butter, softened
2  C sugar
2 ¾ C flour
2 tsp Cream of Tartar
¼ tsp salt
2 T cinnamon
1 tsp baking soda
2 eggs
2 cookie sheets lined with parchment paper
Hand mixer
Medium bowl
Large bowl
Ice cream scoop
1)      Preheat oven to 400˚.
2)      Sift together flour, salt and baking soda in medium bowl.
3)      Beat butter and 1 ½ C sugar until light and fluffy in large bowl.
4)      Add eggs and mix well.
5)      Gradually mix in dry ingredients.
6)      Mix remaining sugar and cinnamon in medium bowl.

7)      Scoop dough into balls, roll in cinnamon mixture and place on baking sheet.
8)      Dough will spread while baking, so spread at least 2 inches apart.  Bake for 12 minutes.

9)      Store in air-tight container.
