Fresh Chicken and Arugula Salad

(No pics because we were too hungry!)
I had two leftover pieces of chicken in the fridge from a previous recipe, so I put this together for lunch today.  You can serve 2 generous portions.  Someone will think it’s a special lunch, but it’s as easy as pie!
What You Will Need:
½ pkg pre-washed Arugula
1 T olive oil
2 chicken breasts, skinless and boneless (Italian marinated chicken breasts are good for this recipe again)
¼ C grated Parmesan cheese
½ ripened Avocado, sliced
1 T Ken’s Lite Caesar Dressing
Large skillet
Medium bowl
1)      Heat olive oil in medium or large skillet over medium-high heat.
2)      Add chicken to skillet.  Brown and cook through.  (About 4 minutes per side.)
3)      Remove chicken from skillet and slice.
4)      Add arugula, avocado and chicken to medium bowl.  Toss with Caesar dressing.
5)      Grate cheese over top and serve.
