"Date" Night Chicken
8:12 PMI was a little skeptical about this recipe at first because neither my husband nor I are big sweet main dish fans. This dinner turned out to be scrumptious. The sweetness of the date with the dark meat of the chicken and the potency of the shallot is surprisingly tasty. You’ll see, just try it. The original recipe calls for more stuff, but I thought my way brought enough flavor to the table. We ate my favorite salad (shown) and bread and it was plenty. I gave the kids some clementines to replace the shallots for them.
2 lbs chicken drumsticks
3 cinnamon sticks
1 T lemon juice
8 shallots, peeled
1 tsp ground ginger
1 tsp cumin
½ tsp turmeric
1/8 tsp cayenne pepper
3 C chicken broth
9 dried dates, pitted and halved
What You Might Have at Home:
1 T olive oil
1 T flour
Cookie sheet
Aluminum foil
Dutch Oven
1) Heat olive oil in Dutch oven over medium-high heat.
3) Add chicken to Dutch oven and brown on all sides. Transfer chicken to cookie sheet.
5) Add cinnamon, ginger, cumin, turmeric, cayenne pepper for one minute. Add chicken broth and lemon juice while increasing heat to high.
6) Bring to boil, reduce and simmer for 15 minutes.
7) Add chicken to pot. Bring to boil, reduce to medium-low and cover for 25 minutes.
8) Remove chicken and shallots from pot. Cover with aluminum foil to keep warm.
10) Plate chicken and pour sauce over top.
11) Serve.
