Creamy Meatballs and Pasta

3:09 PM

I promise I’m not trying to keep all of my secrets to myself as far as menu items are concerned.  We’ve been going non-stop in this house and I’ve been taking lots of shortcuts in the kitchen.  This next recipe is so easy, it’s embarrassing.  But that’s what I do, I reveal my tips!  Here goes….
Every once in a while I’ll put these meatballs in my cart.  They’re tasty and easy to toss together with some pasta.  I know the whole family enjoys the meatballs and the sauce I serve with them.  Typically I’ll whip up a homemade marinara sauce with them, but last night I didn’t have all of the ingredients in the cupboard.  How bad could it be when you have tomatoes, cheese and garlic?  Pretty tasty.
What You Will Need:

1 (14.5 oz) can diced tomatoes, undrained
1 tsp minced garlic
1 T olive oil
1 tsp dried Basil
½ C Whole milk
1 tsp flour
½ C grated Parmesan cheese
½ lb Angel Hair pasta
1 chicken bouillon
1 large skillet
Strainer
1 large pot
1)      Heat olive oil in skillet over medium-high heat.  Add garlic and tomatoes.

2)      Whisk in milk and flour until thickened.
3)      Stir in basil.  Simmer.
4)      Add meatballs.  Cover and cook for 10 minutes.

5)      In large pot, bring at least 1 quart of water to boil.  Add pasta.  Cook until al dente.
6)      Strain.  And add to meatballs when cooked through.
7)      Grate cheese over top.  Mix and serve while hot.
