Christmas Breakfast

Since our youngest was born, we make sure to open up our gifts Christmas morning at home and then head out to the grandparents’ houses.  Almost everyone lives in town, so we try our best to see everyone.
It’s nice to be able to relax under our own tree first thing and eat some yummy breakfast.  Some family visits us, so I like to have plenty of food to provide guests as well.
My typical menu involves some kind of breakfast casserole, cinnamon rolls, regular bread, seasonal fruit salad and OJ.
This year, the breakfast casserole is coming straight from Paula Deen, “y’all.”  It is loaded with butter and cheese, no surprise at all.
What You Will Need:

8 eggs
3 T butter
2 C shredded Cheddar Cheese
2 C grated Parmesan Cheese
5-6 C diced French baguette

Looks like a fondue party!
1 lb. bulk sausage
2 ¼ C whole milk
1 medium yellow onion, chopped
4 C frozen shredded hash browns
2 T Mustard
1 tsp salt
¼ tsp nutmeg
¼ tsp pepper
1 13x9 glass casserole
Non-stick cooking spray
2 skillets
1 medium bowl
1)      Preheat oven to 350˚.
2)      In skillet, melt butter over medium heat.  Add onion and cook over medium-low for 5 minutes.
3)      Stir in hashbrowns.  Cook for 5 minutes.  Pour into greased casserole.
4)      Brown sausage. 
5)      While sausage cooks, combine eggs, milk, salt, pepper, nutmeg and mustard.  Whisk until blended well.

6)      Layer bread over onion mixture.

7)      Spoon sausage over bread.
8)      Pour in egg mixture over sausage.
9)      Sprinkle Parmesan evenly over casserole.  Top with Cheddar.

10)   Bake uncovered for 50 minutes or until set.
