Three Cheese Piccolini

What do you cook for dinner when you don’t feel like cooking dinner?  Pasta.  Throw these ingredients together and you’ll have enough left over for lunch the next day too!  It’s great finger food for the little ones and the cheese fills up the big ones!  Plus the broccoli is smothered in cheese, so no one will leave the table without eating their veggies.  Another bonus is that you might have all of these ingredients already on hand.
What You Will Need:
1 lb piccolini pasta (mini-wheels)
1 (14 oz) can diced tomatoes
1 (6 oz) can tomato sauce
2 garlic cloves
2 T olive oil
Salt and pepper
Crushed red pepper
Basil
Oregano
Parsley
1 cup ricotta cheese
¼ cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 bag frozen broccoli
Large pot
strainer
1)      Cook pasta according to package directions, adding broccoli with 5 minutes left.
2)      Drain and return to pot.
3)      Heat olive oil in skillet.  Add garlic and cook for 1 minute.
4)      Add tomatoes, sauce, a dash of basil, oregano, parsley, salt and pepper.  Bring to a simmer.
5)      Add ½ cup of ricotta.  Stir and add to pasta/broccoli.
6)      Add mozzarella and parmesan and serve.  Add dab of ricotta overtop of pasta.

  1. Oh I love making this!! I made something similar last night but with feta cheese and sour cream, minus the ricotta. I could eat that stuff all day. Anyways, I'm gonna give this a try! Thanks.
