Sure to A-peel Sugar Cookies

It’s almost Cookie Season!  I thought it would be a good idea to recommend some cookie recipes now, so you’ll have plenty of time to decide what to bake come December.  This recipe makes 5 Dozen cookies, which allows you to make some for your neighbors, your family or that friend that needs a little tender-loving care.
I discovered this recipe many years ago when I was looking for a sugar cookie with a little kick to it.  You’re going to love these.
What You Will Need:
1 T lemon peel, grated
1 T lemon juice
What You Might Have at Home:
2 ½ C flour
1 ½ C sugar
1 C unsalted butter
2 eggs, beaten
1 ½ tsp cream of tartar
1 t baking soda
¼ tsp salt
For Frosting:
2 ½ C powdered sugar
½ cup lemon juice
Large bowl
Small bowl
Hand mixer
2 baking sheets
Parchment paper
Cooling racks
1)      Preheat oven to 400˚.  Combine ingredients except for powdered sugar and ½ cup lemon juice in large bowl.  Beat at low speed until mixed.
2)      Line baking sheets with parchment paper.  Arrange spoonfuls of dough onto two cookie sheets about two inches apart.  Bake until light brown (about 8 minutes).  Cool completely on racks.
For frosting:
1)      Combine powdered sugar and remaining lemon juice in small bowl.  Mix until smooth.  Add more sugar if needed, so consistency isn’t too runny.
2)      Frost cookies.  EAT COOKIE.  Share.
