Peanut Butter Cookies with Chocolate Chips

I feel very guilty posting this recipe after my food-allergy friendly recipe a few weeks ago.  This screams food allergy all over it.  The good thing is that it is Gluten-Free. Yeah.  Make sure you bake these for your adult friends and kids you are absolutely positive are not allergic to nuts.  Not only are these made with peanut butter, but they are made with the “crunchy” kind.  My entire house is covered in peanut butter deliciousness.  (Makes a little less than 2 dozen)

What You Will Need:
1 cup chunky peanut butter
1 cup brown sugar
1 egg
1 tsp baking soda
½ tsp vanilla
1 cup semi-sweet chocolate chips
2 cookie sheets lined w/parchment paper
1)      Preheat oven to 350˚.
2)      Mix first 5 ingredients well in medium bowl. 
3)      Fold in chocolate chips.
4)      Roll into balls and place on cookie sheets.
5)      Bake for 12 minutes.

6)      Cool and transfer to rack.

7)      Store in air-tight container.
