Have Your Cake and Eat it Too

Yesterday I had lots to do with little time.  We have another birthday in the family, so I decided to make what I know is delicious and dependable.  I also had Wine Club, so I needed to whip together a tasty appetizer and dinner for the kids and the hubs.  So while the cake was baking in the oven, I had time to prepare the app and throw something together for dinner IN NO TIME!

What You Will Need for the Ricotta/Apple Slices:

4 apples, sliced
1 lemon, cut in half
1 baguette, thinly sliced
4 T ricotta cheese
4 T apple sauce
Nutmeg
Small bowl
Medium bowl
Platter
1)      Add apple to medium bowl.  Squeeze half of lemon over apple and stir.
2)      Meanwhile, mix cheese, apple sauce and nutmeg in small bowl.
3)      Place slices on platter.  Spoon sauce over slices.
4)      Serve with bread, extra apple and extra sauce.

What You Will Need for the Pea Soup:

2 can of condensed Split Pea Soup
4 oz smoked ham steak, diced
Sauce pan
Small skillet
Whisk
1)      Cook soup according to directions in sauce pan.
2)      Add ham to skillet and brown.

3)      Add ham to soup.
4)     Serve with Cheesy English Muffin toasts and apple slices.



Now you have an appetizer, dinner served and a cake ready for frosting!  And you did it
in NO TIME!
