The Double Chocolate Mint Super Cookie

We have a chocolate lover coming over for dinner tonight.  I decided to forego the cake and make some super-chocolaty cookies for dessert instead.  We’re having a pretty heavy dinner anyway, so I’m not sure there would be room.

I found this incredibly delicious recipe...
Brace yourselves for an amazing cookie: The Double Chocolate Mint Super Cookie. 
What You Will Need:
2 C semi-sweet chocolate chips
¾ C unsalted butter
1 ½ C brown sugar
2 eggs
2 ½ C flour
1 ¼ tsp baking soda
½ tsp salt
1 ½ half packages of Andes mints

Medium saucepan
Large Bowl
Medium bowl
Hand mixer
3 cookie sheets lined with parchment paper
Ice cream scoop
1)      Melt butter in medium sauce pan over medium heat.
2)      Stir in brown sugar.  Remove from heat
3)      Stir in chocolate chips.  Cool for 10 minutes.
4)      Add chocolate mixture to large bowl.  Blend in eggs.
5)      Sift together baking soda, flour and salt and pour into medium bowl.  Gradually blend into chocolate mixture.
6)      Cover and chill for an hour.  (Chilling makes it easy to work with the dough.  If you don't have time, be sure to freeze for atleast 10 minutes and use flour your hands.)

7)      Use an ice cream scoop to make balls and place onto cookie sheets.  Bake for 8-10 minutes.
8)      While still warm place Andes mint (name side down) on top of each cookie.  Swirl after melts.
9)      Cool in fridge.
