Seriously Stuffed Chicken

There are many ways to stuff chicken. You can stuff it anyway you prefer. Always include some kind of cheese, a fragrant spice and you’ll be amazed with your creation. Here’s one that is full of flavors your whole family will enjoy.
(Serves 4)
What you’ll need:
4 chicken breasts, skinned, boned and pounded 1 inch thick
1 cup fontina cheese, grated
½ cup (drained) chopped sun-dried tomatoes
1 (14 oz) jar of quartered, marinated artichoke hearts, chopped
What you might already have at home:
1 T dried basil
2 T olive oil
8 toothpicks
Large bowl
Cutting board
Skillet
Baking pan
Non-stick cooking spray
1) Preheat oven to 375˚.
2) In large bowl, mix cheese, artichoke hearts, tomatoes, basil.
3) Lay each piece of pounded chicken on cutting board. Add even amount of cheese mixture in middle of each chicken. Roll and place two toothpicks into each piece keeping fastened.
4) Add oil to skillet. Cook each piece chicken, making sure evenly browned.
5) Transfer to greased baking sheet and bake until cooked through, about 10 minutes.
