Parmesan-Crusted Pork

I found this recipe on The Food Network again. I’m always skeptical about how easy they make things look, but Melissa D’Arabian is on your side! This is so yummy! Serve with sautéed asparagus and some mac n’cheese.

What you’ll need:
1 pork tenderloin, cut up into 4 equal chops and pounded about 1 inch thick
What you might have at home:
3 slices bread
1/3 cup parmesan cheese (I just used “shaky”)
¼ cup flour
Salt and pepper
1 egg
1 T water
3 T vegetable oil
1 T butter
Food processor or blender
2 Shallow bowls
2 Plate
Paper towel
Large sauté pan
1) Pulse bread in food processor until crumbs. Add parmesan and a dash of salt, pinch of pepper and pulse again. Transfer to shallow bowl.
2) Create breading station. On plate mix flour, salt and pepper. In shallow bowl, whisk egg. Place shallow bowl of breadcrumb mixture at the end.
3) Heat oil and butter in large sauté pan over medium-high heat. Dip pork in flour mixture, egg and breadcrumb mixture. Cook until a nice golden brown and then flip (about 2 minutes per side and cook 2 pieces at a time.) Transfer to plate with paper towel to remove extra oil. 
4) Serve with asparagus and mac n’ cheese.
