"Oh, That's Good" Chocolate Cake

After a week of gastroenteritis, my oldest decided she wanted a birthday cake after all. Betty Crocker let me down yesterday, but this recipe saved the day. I had all of these ingredients at home and the cake turned out to be delicious. I learned my lesson never to take short cuts!

What you might have at home:
2 cups sugar
1 ¾ cups all-purpose flour
¾ cup cocoa
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 eggs
1 cup skim milk
½ cup oil (I used ¼ vegetable + ¼ olive oil)
2 tsp vanilla extract
1 cup boiling water
2 9-inch round baking pans
1 large bowl
1 hand mixer
Parchment paper
Non-stick cooking spray

1) Preheat oven to 350˚.
2) Cut two 9-inch circles out of parchment paper. Place in bottom of pans. Spray with cooking spray (on paper and sides of pan).
3) In large bowl, sift sugar, flour cocoa, baking powder, baking soda and salt. Stir with fork, making sure no lumps.
4) Add eggs, milk, oil and vanilla. Beat on medium speed for 2 mins. Stir in boiling water.
5) Pour batter into two pans.
6) Bake for 30-35 mins.
7) Cool completely.

Chocolate icing (makes about 2 cups)
½ cup butter
2/3 cup cocoa
3 cups powdered sugar
1/3 cup reduced-fat milk
1 tsp vanilla extract
Medium saucepan

1) Melt butter. Stir in cocoa.
2) Add 1 cup sugar, stir. Add ½ milk, stir. Add 1 ½ sugar, add remaining milk. Add remaining sugar. Stir in vanilla. Beat mixture to your desired consistency.
