Mouth-watering Shrimp and Feta Bake

You cannot go wrong with feta and shrimp and baking it makes this recipe simple and fast! Serve with rice, a simple salad and bread. Scrumptious!

What you’ll need:
1 1/2 lb shrimp, peeled and deveined
½ cup crumbled feta
1 28-oz can chopped tomatoes in juice
4 scallions, chopped
½ lb cooked orzo (half of a box)
What you might have at home:
2 garlic cloves, minced
2 T olive oil
1 tsp dried oregano
Large non-stick skillet
9x13 baking dish
Non-stick cooking spray

1) Preheat oven to 400˚.
2) Heat olive oil over medium-high heat in skillet. Add scallions and garlic, cooking for about 2 minutes. Add tomatoes with juice and boil for about 5 minutes.
3) Remove from heat. Stir in shrimp. Add shrimp mixture to greased baking dish. Sprinkle with cheese.
4) Bake for 10 minutes or until shrimp are cooked. Sprinkle with oregano.
5) Serve over rice.
